Foodies and aspiring foodies - you've got flavorful chicken, quinoa, and a zesty lemon kick mixed together in a comforting broth. Perfect for when you need a cozy pick-me-up or want a bright and flavorful soup.
Ingredients
12 oz shredded cooked chicken
1 cup quinoa
2 onion
2 clove of garlic
1/4 cup shredded lemon zest
4 cups chicken broth
2 tsp. paprika spice
a little parsley
1 tsp. salt
4 Tbsp olive oil
Preparation
Step 1: Mince the onion and garlic. Place the olive oil in one boiling pan and add the garlic and onion. Stir-fry them for 3-5 minutes.
Step 2: Add the chicken broth, quinoa, lemon zest and spices. Cook for 20 minutes.
Step 3: Add the shredded chicken, 1 cup of water and cook for 10 more minutes.
