Introducing the ultimate comfort in a bowl: Chicken and Bean Soup! It's the kind of food that makes you feel all fuzzy inside, perfect for chilly days or when you need a big foodie bear hug.
12 oz chicken breast
2 cups canned white beans
2 cans stewed tomatoes or 4 fresh Roma tomatoes
4 cups chicken broth
2 tsp. oregano
2 tsp. basil
2 tsp. salt
1 pinch of parsley
Step 1: Cut the chicken breast into small cubes and place them in one cooking pan.
Step 2: Add the beans, chicken broth, spices, and oregano to the pan. Cut up tomatoes in quarters and add to pan. (If using stewed tomatoes in can, add to pan or pot with only 5 minutes left to simmer since they're cooked already)
Step 3: Cover the pot or pan and simmer together for 30 minutes. Serve and enjoy.
