Vegan "Cheesy" Baked Quinoa

Who said plant-based meals have to be boring? This flavorful, healthy vegan quinoa recipe will help you step up your kitchen game as you prepare a new meal you and your family will love.

Ingredients

  • 1 1/2 cup quinoa

  • 1 cup broccoli

  • 1 cup rice milk

  • 2 Tbsp. nutritional yeast

  • 1 tsp. paprika spice

  • 1/2 tsp. garlic spice

  • 1/2 tsp. curry spice

  • 1/2 tsp. salt

Preparation

Step 1: Cut the broccoli into small pieces. Mix them with the quinoa and 1 cup of water.


Step 2: Place them in a casserole dish or Dutch oven and bake them for 15 minutes at 375F.


Step 3: Separately mix the rice milk, nutritional yeast, spices, and salt. Carefully remove the dish with quinoa from the oven, and pour the mixture over.


Step 4: Bake for 15 more minutes and let it cool a little before serving.
