1 1/2 cup quinoa
1 cup broccoli
1 cup rice milk
2 Tbsp. nutritional yeast
1 tsp. paprika spice
1/2 tsp. garlic spice
1/2 tsp. curry spice
1/2 tsp. salt
Preheat oven to 375F. Cut the broccoli into small pieces. Mix them with the quinoa and one cup of water.
Place the broccoli and quinoa in a Dutch oven or an equivalent baking dish with an oven-safe cover. Bake at 15 minutes.
In the meantime, mix the rice milk, nutritional yeast, spices, and salt. Open the oven, remove the quinoa dish, and pour the mixture over.
Bake for 15 more minutes. Let the baking dish cool before serving.
