Ingredients
4 sweet red peppers
2 cup quinoa
1 cup grounded chicken
1 tsp. salt
1 tsp. black pepper
8 slices bacon
8 Tbsp. tomato salsa
Preparation
Step 1: Cut the peppers in half and remove seeds. Rinse peppers.
Step 2: Mix together quinoa, chicken, tomato salsa, 4 Tbsp. water, salt, and pepper. Fill the peppers with the mixture.
Step 3: Preheat the oven to 350F and place the peppers for baking. Bake them for 15 minutes.
Step 4: Cut the bacon into small cubes, remove the peppers from the oven, and add bacon. Bake all together for 10 more minutes.
