Stuffed Peppers with Bacon Topping is a hearty dish that combines colorful bell peppers with a flavorful mixture of quinoa, tomato salsa, and savory seasonings. The crowning glory? Crispy bacon bites on top, adding a smoky crunch to every bite. It's a satisfying blend of flavors and textures, perfect for a family dinner or a potluck gathering.


  • 4 sweet red peppers

  • 2 cup quinoa

  • 1 cup grounded chicken

  • 1 tsp. salt

  • 1 tsp. black pepper

  • 8 slices bacon

  • 8 Tbsp. tomato salsa


Step 1: Cut the peppers in half and remove seeds. Rinse peppers.

Step 2: Mix together quinoa, chicken, tomato salsa, 4 Tbsp. water, salt, and pepper. Fill the peppers with the mixture.

Step 3: Preheat the oven to 350F and place the peppers for baking. Bake them for 15 minutes.

Step 4: Cut the bacon into small cubes, remove the peppers from the oven, and add bacon. Bake all together for 10 more minutes.
