About the Recipe

Mix up your breakfast-for-dinner menu with the Buckwheat Pancake Ham and Tomato Sandwich! You'll get an anytime breakfast hug with ham and tomato cozied between two warm, fluffy pancakes. Swapping out bread for pancakes will earn you instant 5 stars for this delicious twist of a sandwich.


  • 1 cup 100% buckwheat flour

  • 1/2 cup rice milk

  • 4 tbsp. flax seed flour

  • pinch of salt

  • 1 tsp. baking powder

  • guacamole

  • 4 pieces of ham

  • 1 tomato


Step 1: Start with the pancake preparation. Add buckwheat flour, flaxseed flour, milk, and salt in one bowl, and mix them all together until fully mixed.

Step 2: Preheat one pancake pan (non-sticky) and spread a little oil, or you can prepare them with an oil spray.

Step 3: Pour mixture into the pan and cook every pancake for 1-2 minutes on each side (the heat should be medium).

Step 4: Take one pancake, spread guacamole, and add ham and circles of tomato. Place one more pancake on top, and you have your sandwich. Repeat stacking order to your desired taste.
