About the Recipe

Coconut cookies taste like little bites of paradise! These sweet treats are gluten-free and loaded with coconut's rich, nutty flavor, creating a delightful combination of chewy and crispy textures. Each bite mixes buttery dough with coconut goodness, making them an exciting snack or dessert option.

Ingredients

  • 1/2 cup coconut flakes

  • 4 oz. vegan butter

  • 4 oz. gluten-free flour

  • 4 oz. brown sugar

  • 5-7 drops vanilla extract

  • 1/2 tsp. baking powder

  • 1/4 cup flax seed

  • 1/4 cup water

Preparation

Step 1

  • Start by mixing the butter and sugar, then add applesauce, flaxseeds, and water to the mix. Continue mixing.


Step 2

  • Add dry ingredients: coconut flakes, flour, and baking powder. Mix well.


Step 3

  • Preheat oven to 350F. Place parchment paper on a cookie sheet.


Step 4

  • Using an ice cream scooper, form balls and place them on the covered baking sheet.


Step 5

  • Bake cookies for 18-20 minutes, going less time for soft cookies and more time for crispy, crunchy cookies.
