1/2 cup coconut flakes
4 oz. vegan butter
4 oz. gluten-free flour
4 oz. brown sugar
5-7 drops vanilla extract
1/2 tsp. baking powder
1/4 cup flax seed
1/4 cup water
Start by mixing the butter and sugar, then add applesauce, flaxseeds, and water to the mix. Continue mixing.
Add dry ingredients: coconut flakes, flour, and baking powder. Mix well.
Preheat oven to 350F. Place parchment paper on a cookie sheet.
Using an ice cream scooper, form balls and place them on the covered baking sheet.
Bake cookies for 18-20 minutes, going less time for soft cookies and more time for crispy, crunchy cookies.
