Need a fun way to eat more vegetables and mix up taco night? These lettuce taquitos will spice up your meal and cover your nutritional needs. You'll forget it's so healthy and easy to make! Once you learn this recipe, you'll want to bring it to parties, serve a meal around it and let it stand out on its own. Keep it as an appetizer or build a meal around it. This one's sure to be a crowd pleaser!

Ingredients

  • 16 leaves of Romaine lettuce

  • 1 lb. ground beef

  • 2 tbsp. tomato salsa

  • 1 tsp. paprika spice

  • 1/2 tsp. salt

  • 1/4 cup coconut yogurt

  • 1/4 tsp. garlic powder

  • 1 tsp. olive oil


Preparation

Step 1

  • Add a little oil to one cooking pan, then combine the meat with tomato salsa, a pinch of salt and paprika spice. Stir-fry for 10-15 minutes until the meat is well done.

Step 2

  • Overlay 2 lettuce leaves as a bed and add 2 tbsp. meat. Repeat the process until the end.

Step 3

  • In one bowl, add the coconut yogurt and mix it with a little garlic powder and salt.

Step 4

  • Place the taquitos on one plate and spread dressing on top. Enjoy.
