About the Recipe
Crispy tortilla chips form the base, topped with a generous portion of protein-rich black beans and black olives. A vibrant medley of fresh vegetables like tomatoes, black olives, and avocado add a burst of color and essential nutrients. Cilantro and lime add a zest of flavor too.
1 large bag 100% corn tortilla chips
20 black olives
1/4 cup of black beans
2 oz vegan cheddar cheese
pinch of salt
cilantro leaves optional
Step 1: In one deep bowl, smash the avocado, and add minced onion, a little salt, and lemon juice. Mix them well.
Step 2: Cut the olives and peppers into circles and shred the cheese.
Step 3: Place the tortilla chips in a heatproof dish; add the guacamole, black olives, peppers, and shredded cheese.
Step 4: Place the dish in the oven at 400F and bake it for 5 minutes. Let it chill a little before serving.
