About the Recipe
100% corn tortilla chips (enough to cover a thick layer on a sheet pan)
1 cup (handful) black olives
1 cup (handful) chopped green peppers
2 oz cheese (vegan cheese optional)
1/4 cup chopped onion
1/2 lime squeezed or 8 drops lime juice
pinch of salt
In one deep bowl, smash the avocado, add minced onion, salt and lime juice. Mix together well.
Cut olives and peppers into circles, and add cheese.
Spread the tortilla chips across a sheet pan. Add the guacamole, olives, peppers and shredded cheese.
Place the sheet pan in the oven at 400 degrees F for 5 minutes. Let it chill a little before serving.
